Serves 1
3 tablespoons coconut oil
2 eggs, scrambled
¼ onion, diced
¼ red bell pepper, chopped
½ cup spinach
2 brown rice tortillas
Sauté onion and red bell pepper in 2 Tablespoons coconut oil. Add the remaining 1 tablespoon of coconut oil and scramble eggs and spinach.
Fill tortillas with mixture and serve.
